In keeping with everyone’s predictable fitness and nutrition resolutions for the new year, I thought I’d post one of those rare food recipes which delivers health benefits and actually approaches tasting as good as it looks: the protein pancake!
Adapted from the Tone It Up girls, this recipe is just perfect for one if you’re used to feeding everyone else in the house their natural hearty fare before being left alone to fend for yourself. I like to take a few minutes to put together something tasty now and then just for me, but finding those “recipes for one” are tricky.

Trim Protein Pancakes
* the whites of 3 eggs
* 1/2 banana
* 1 teaspoon ground flax seed
* 1 tablespoon protein powder (I used Tera’s Whey/organic unsweetened)
* handful of blueberries
* your favorite syrup
Blend egg whites, banana, ground flax and protein powder until fairly smooth and combined. Cook your batter like you would a pancake – I used Pam cooking spray on a non-stick skillet. Add a few blueberries to your cakes and sprinkle more on top when you’re done, adding syrup. Eat them while they’re hot! Yum.
